Available by pre-order, ask the waitstaff for details. The ribs are prepared in three stages: 1) dry-aged in a chamber for 30 days, 2) slow-cooked for over 15 hours, 3) grilled to perfection. The bones are then removed, and the meat is cubed. Cucumbers and tomatoes are diced large and dressed with olive oil, garnished with herbs. One portion of potatoes with Parmesan cheese is also included. Served with roasted corn and sauces in ramekins. All topped with herbs.
